Bacon-Wrapped Turkey

 

Norbest Sweetheart Turkey Roll

1 pound thickly sliced bacon

1 T. flour

Turkey-size oven bag

 

Place the frozen turkey roll into a sink of very hot water for one minute. Meanwhile, lay out the bacon strips side by side on a cookie sheet. Remove the turkey from the water and pat dry. Cut open the bag and peel it away. Lay the turkey roll on top of the bacon slices. Lift the strips from one end to cover the turkey. Roll forward until it’s completely wrapped. Place flour in oven bag and shake. Put turkey into bag. Bake according to package directions for the bag.

  Cream of Chicken Soup     1 c. chopped carrots 1 c. chopped celery 1 c. chopped onion 1 c. vegan butter ¼ cup plus 2 T. cornstarch 2 quarts chicken broth or 2 quarts hot water plus 1/3 c. powdered, gluten-free chicken bouillon 2 c. cooked, chopped chicken breast 1 c. dairy-free half-and-half, heated Salt and pepper to taste 2 c. cooked white rice   Melt margarine in a large soup pot. Add chopped vegetables and stir. Cook about five minutes. Whisk cornstarch into chicken broth. Add to vegetables. Stir until the liquid comes to a boil and thickens. Reduce to simmer. Cover and cook ten minutes. Add chopped chicken. Cook five more minutes. Add half-and-half and mix well. Don’t let the soup come back to a boil after adding the half-and-half. Season with salt and pepper. To serve, put a scoop of rice in each bowl and add soup. Store leftover rice separate from leftover soup. (The rice gets soggy if left in the soup.)

  Hills and Valleys (Gma's Recipe)   6 eggs 1 cup milk 1 cup flour ¼ t. salt 5 T. butter   Whip eggs until thick and lemon colored. Add milk, flour, and salt. Place butter in 9x13” pan and heat in 350 degree oven until melted. Pour batter into the melted butter. Bake for 15-20 minutes. Serve with butter and syrup, jam, or powdered sugar.

  Salsa Fresca (Annette Anthony)   4 to 5 tomatoes 1 to 2 Anaheim peppers 1 large white onion Zest and juice of 2 lines 1 bunch cilantro Salt to taste Garlic powder   Finely chop vegetables and cilantro. Add zest and juice. Season with salt and garlic to taste. Refrigerate.
